How To Make Candied Lemons

1. Slice lemons into 1/8-inch thin round slice and set the thinly sliced lemons aside.
2. In a large skillet, combine water, sugar, and lemon juice and bring it to a boil. Once the sugar has dissolved, turn the heat to medium-low.
3. Add the lemon slices in a single layer and simmer for 15 minutes to 30 minutes, turning the lemons over gently with tongs halfway through. Keep an eye on it to make sure it doesn’t burn, turn to a lower heat if necessary.
4. Once the lemons are slightly translucent, remove them gently from the pan with tongs, keep liquid in pan, and lay on parchment paper and allow them to set for at least 4 hours to cool to room temperature.
