When it comes to sweet treats, I’m a sucker for baked goods, especially cookies. But actually taking the time to prepare them—while making a mess in my kitchen—can be a pain.
Thankfully, this deep-dish Chocolate Chip Cookie for One is the best of both worlds!
Five minutes of prep and 20 hands-off minutes in the oven are all you need for an ooey, gooey Chocolate Chip Cookie for One.

Unsalted Butter
Light Brown Sugar
Granulated Sugar
Egg Yolk
Vanilla Extract
All-Purpose Flour
Baking Soda

How To Make A Chocolate Chip Cookie For One
1. Begin by preheating the oven to 350F and spraying an 8-oz. ramekin with cooking spray.
2. Then, mix together either softened or melted butter with light brown sugar in a small bowl.

3. Next, add in the egg yolk and vanilla extract.

4. Then add in your flour, baking soda, and salt.

5. And finally, the chocolate chips!

6. Now transfer your dough to the prepared ramekin and bake for about 20 minutes!

High-quality ingredients are always key, and when it comes to the egg, fresh is definitely best! I admit, before switching brands, I didn’t think there was much difference between one egg brand and another.
But then I switched to Nellie’s Free Range eggs, and it totally changed my mind. Compared to lower-quality eggs, the shells are thicker, the yolks are richer, and they’re deeper in color—how fresh yolks should be.
Even better, these eggs are Certified Humane free range, meaning that Nellie’s hens have room to roam and are treated with care.
It’s no wonder they taste better!

Needless to say, I use a Nellie’s Free Range egg whenever I make this deep-dish cookie. I figure because the recipe only calls for one yolk, it better be a good one!

Steps
Preheat the oven to 350F and spray an 8-ounce ramekin with cooking spray, and set aside.
In a small bowl, mix together the butter and light brown sugar with a fork or rubber spatula.
Mix in the egg yolk and vanilla until combined.
Mix in the flour, baking soda, and salt until combined.
Fold in the chocolate chips, and transfer to the prepared ramekin.
Bake for 20 to 22 minutes or until a wooden pick comes out clean.
Sprinkle with sea salt or top with vanilla ice cream, if desired.
