These Guinness No Bake Cookies are an easy and rich treat that’s perfect for St. Patrick’s Day and beyond. They’re a fun twist on classic No Bake Cookies!
My biggest regret from our trip to Ireland almost two years ago, other than not having more time there, is not visiting the Guinness (and Jameson) brewery/distillery.
Which, of course, was because we didn’t have enough time.
As much as I love my Irish whiskey and a good stout, the draw of Giant’s Causeway and the Cliffs of Moher won out. Just go look at the pictures, can you really blame me?

But I’m headed back to Ireland in the fall and I’m hoping I can convince my travel companions that both places are a must visit while we’re there.
Shouldn’t be too hard, right???

You know how everyone talks about how Europeans drink warm beer?
Well, it’s not really warm, it’s actually room temperature and that’s actually the only way I can drink beer.
So I encourage you to maybe try a room temperature pint of Guinness to go with these deliciously rich Dark Chocolate Guinness No Bake Cookies.

So making these Dark Chocolate Guinness No Bake Cookies seemed like a must as we head into a week of St. Patrick’s Day celebrations.

These Dark Chocolate Guinness No Bake Cookies are a delicious mix of butter, sugar, stout, oatmeal, pudding mix, cocoa, and more.
They’re super easy to make and the results are a delicious, chocolatey, no-bake dessert!
These are a soft and chewy cookie recipe to begin with and because of this, it’s very important that these cookies are not made on days when there’s a lot of humidity or rain because the cookies will never set.
This is a good rule of thumb to follow for any no bake cookie recipe, but these ones especially.

Steps
Add butter, sugar, and Guinness to a large pot and bring to a boil. Keep on a rolling boil for 2 minutes.
Remove from heat and stir in remaining ingredients, once fully combined, plop large spoonfuls onto wax paper and let set for about an hour.
Notes
It's very important to have a rolling boil for 2 minutes, if you undercook then your cookies won't harden and if you overcook then your cookies will turn out dry and crumbly.
Cookies will have a hard time setting if it's raining or humid.
If mixture seems dry right off the bat, add a little more Guinness, if it seems soupy, add some more oats. This recipe should slightly spread, but not run, when plopped on the parchment paper.
If you have a hard time getting cookies to set, place them in the fridge or freezer to help them along.
Wrap individually if transporting to share so that cookies to not soften and stick to each other.
