How To Bake A Cookie Cake From Scratch
1. Preheat oven to 350° F and line a 9″ round cake pan with parchment paper and grease with cooking spray.
2. In a large bowl, using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and sugars together until light and fluffy.
3. Add the eggs, one at a time, mixing well between each addition. Add in the vanilla.
4. Whisk the flour, baking soda, corn starch, and salt together in a medium bowl and add to the butter mixture and mix on low until just combined. Fold in the M&M’s.
5. Transfer and press the cookie dough into an even layer in the prepared cake pan. Top with a few more M&M’s, if desired.
6. Bake until the cookie is golden brown, about 25 minutes. Let the cookie cake cool in the pan completely before running a knife around the edge of the cake and transferring it to a cake stand.
7. Prepare and transfer the frosting to a piping bag fitted with a large star tip. Pipe the frosting around the edge of the cooled cookie cake and top with additional M&M’s. Slice into wedges.

Storage Instructions For Cookie Cake
Fresh:If kept in an airtight container, the cake should stay fresh for at least 1 week.
Frozen: I highly recommend freezing it after baking but before frosting. Store in an airtight container and freeze for up to 3 months. Let thaw at room temperature. You can also freeze the dough and let it thaw in the fridge before baking. It may take a few additional minutes to bake since the dough will be chilled.
Notes About This Cookie Cake Recipe:
- This cake will be slightly underdone in the center, and a toothpick will not come clean.
- The cake needs to cool completely in the pan in order to be stable enough to move, slice, and decorate.
- M&M’s can be replaced with chocolate chips if desired.
